Why add antioxidants to food?

There are two reasons why you may wish to add an antixodiant to your food product

  1. Protection - foods with high fat levels can be prone to oxidation over the course of their shelf life. The use of antioxidants alone or in combination with modified atmosphere packaging can reduce the risk of oxidation in e.g. meat products.
  2. Nutritional enrichment - the benefits of antioxidants (and their free radical scavenging ability) is widely reported and more and more products are appearing on the market place with reference to their antioxidant content
